Organic IGP Toscana White

A wine with an intense color and a structured taste, it is characterized by its aroma reminiscent of yellow-fleshed and exotic fruits. It is a fragrant wine that stands out for its broad olfactory bouquet, which contrasts with its dryness to the taste, due to the complete transformation of grape sugars into alcohol.

Our white IGP RIBEINO comes from a single vineyard of approximately 5000 m2 planted on the slopes of the town in 1940, it presents mainly ancient varieties of Colombana and Tuscan Trebbiano, minimally white Malvasia. The first two were among the most widespread spoiled whites in the Pisan hills area until the 70s, when Colombana was used both for winemaking and as a table grape given its strong sugary imprint which recalls caramel and its yellow color intense which remains in the amber shades of the intense and full-bodied wine produced from these grapes.

The harvest is usually late considering that it is a white blend and does not take place before the third week of September, considering the late maturation typical of Colombana, the vinification takes place with a short maceration on the skins at a controlled temperature between 17 and 18° C in steel vats. After fermentation, which can last from 20 to 25 days, the wine is racked 2/3 times at the change of the moon, bottled at the beginning of spring and immediately drunk. From our historic vineyard we are unable to obtain more than 1500 bottles, with variations based on the vintage, but precisely with the idea of preserving a spoiled wine that we like so much in 2019 we grafted 2500 cuttings, because the clones selected 80 years ago continue to give us their fantastic grapes.
RIBEINO is a wine that, due to its body and aromas, pairs well with white meat dishes or mature cheeses, as well as fish but in tasty recipes such as cacciucco.
