And here is the latest arrival among the wines of the Terre di Guidoreste winery: Baloccaia is an intense and fruity wine with hints of
red fruits - based on the vines that produce it
hazelnut - as it develops both alcoholic and malolactic fermentation
vanilla and wood - because it rests in oak barriques for a year.

BALOCCAIA is born from the best selection of our Sangiovese, Canaiolo and Colorino, vines planted again from the beginning to continue our idea of valorising local grapes and supporting historically native Tuscan grapes.
The maceration with the skins of the three vines together, thanks to the choice of avoiding the passage through the grape pump and the care to leave as many berries as possible intact during fermentation, immediately creates those distinctive characteristics which, thanks to time, will give structure and shape to this wine, which is intended to be drunk only 18 months later.
After alcoholic and malolactic fermentation in steel, Baloccaia spends a year in oak barriques from which it is bottled and then aged in glass for at least another 6 months.
The result is a full-bodied but clean wine, refreshing despite its 14°, full of fruity and spicy fragrances given partly by the types of grapes and partly by the scents acquired from aging in wood.
Recommended pairings are game, red meats, but also tasty cheeses or strong traditional dishes.
